A Garden-Inspired Botanical Beverage Featuring Lemon Balm

There is something about summer that invites us back to the garden.
Perhaps it’s the warmth of the sun on our skin, the abundance of herbs growing just outside the door, or the simple joy of preparing something fresh with our own hands. As herbalists, these moments remind us that nourishment doesn’t always begin in the medicine cabinet—it often begins in the garden.
One of the herbs I enjoy reaching for during the summer months is lemon balm (Melissa officinalis). With its bright citrus aroma and refreshing flavor, lemon balm has been cherished for centuries in European herbal traditions. As a member of the mint family, it has long been prepared as teas, infusions, and cooling beverages that celebrate both the herb and the season.
For this herbal study, I wanted to create a drink that highlighted lemon balm while pairing it with ingredients commonly found during the summer harvest. The result is the Meadow Mist Refresher—a crisp botanical beverage featuring cucumber, green apple, fresh lemon, and sparkling mineral water.

Meadow Mist Refresher
Herbal Infusion
2 tablespoons dried lemon balm (or a generous handful of fresh leaves)
2 cups freshly boiled water
Fresh Ingredients
½ cucumber, peeled and sliced
1 green apple, chopped
Juice of ½ lemon
To Finish
1–2 teaspoons honey (optional)
Sparkling mineral water
Ice
Fresh lemon balm sprigs for garnish
Directions
Pour freshly boiled water over the lemon balm and allow it to steep for 10–15 minutes.
Strain the infusion and chill completely.
Blend the cucumber, green apple, and lemon juice until smooth.
Strain through a fine-mesh sieve if you prefer a lighter texture.
Combine the chilled lemon balm infusion with the strained fruit mixture.
Add honey if desired.
Pour over ice and top with sparkling mineral water.
Garnish with fresh lemon balm or a cucumber ribbon.
